PELATIHAN PEMBUATAN TEMPE INOVATIF BERBAHAN KACANG KORO SEBAGAI PRODUK PANGAN UNGGULAN UMKM

Abstract
The community service activity titled “Training on Innovative Tempe Production Using Koro Beans as a Leading MSME Food Product” was conducted at Rumah Tempe Alue Naga, Syiah Kuala, Banda Aceh. This program aimed to enhance the knowledge and skills of local communities and micro, small, and medium enterprises (MSMEs) in processing koro beans as an alternative raw material for tempe production that is nutritious, economical, and has the potential to become a regional flagship product. The training was held over two days, on July 25–26, 2025, and was attended by 17 participants, including local tempe producers, MSME owners, and home-based tempe entrepreneurs. The activity also involved two students from the Faculty of Health Sciences and the Faculty of Social Sciences and Education, Universitas Ubudiyah Indonesia, who assisted as field and documentation support. The implementation method consisted of four stages: preparation, training execution, evaluation, and reflection. The program included three main sessions—material presentation, hands-on practice in koro bean tempe production, and product evaluation and discussion. The participants demonstrated great enthusiasm throughout the activity and actively engaged in every session. The evaluation results indicated that participants gained a solid understanding of the fermentation process, hygienic packaging techniques, and product marketing strategies for innovative koro bean tempe. This activity had a positive impact on the local community by encouraging entrepreneurship based on local resources, expanding food innovation insights, and strengthening the potential of MSMEs in Banda Aceh. Through this training, participants are expected to be able to independently produce koro bean tempe, increase its economic value, and support the sustainable development of functional local food products.
